快過年啦,給大家分享「黃金發糕」的食譜,祝大家財源滾滾、步步高升、蒸蒸日上,笑口常開。

食材:100克胡蘿蔔切丁、5片香蘭葉、180克清水、80克砂糖、250克麵粉、4茶匙泡打粉(又稱發粉,製作糕點時常用的蓬鬆劑,記得要購買不含鋁的發粉)、2湯匙油。

作法:
1、將胡蘿蔔丁、香蘭葉蒸軟。
2、將香蘭葉、砂糖加水煮成香蘭糖水。
3、將香蘭糖水倒入蒸軟的胡蘿蔔,打成糊。
4、麵粉和泡打粉混和過篩,倒入已冷卻的胡蘿蔔糊裡,再加油攪拌成麵團。
5、將混合好的胡蘿蔔麵團分裝入小烤杯中,大火蒸17-18分鐘,看到發糕「張開嘴笑」就蒸熟了。

Golden Fa Gao (Chinese cup cakes)

With the coming of the Lunar New Year, let me share with you the recipe for the “Golden Fa Gao”. May all of you be blessed with great wealth, good career progression, great prosperity and happiness in the new year!

Ingredients: 100g diced carrots, 5 pieces pandan leaves, 180g water, 80g brown sugar, 250g flour, 4 teaspoons baking powder, 2 tablespoons oil.

Method of preparation:
1. Steam the diced carrots and pandan leaves in a steamer until they are soft;
2. Add the pandan leaves and brown sugar into water and boil to get pandan syrup;
3. Pour the pandan syrup over the steamed carrots and mix well until a paste is formed;
4. Sieve the flour and baking powder into the carrot paste. Add some oil and knead the mixture into dough;
5. Divide the dough into small baking cups and steam them for about 17-18 minutes under high heat. The Fa Gao are ready once you see cracks of smiles on their surfaces.

The Lunar New Year is round the corner and it’s time to shop and prepare the traditional cuisines, snacks and beverages. With many companies having their year-end dinners and families having reunion dinners, we may end up with bigger waistlines if we are not careful with what we eat over this festive season.

When shopping for the Lunar New Year, try to buy seasonal vegetables and fruits, and meat that contain less saturated fatty acid and cholesterol. Try to minimize processed meat products that are high in saturated fatty acid and cholesterol. Try to add more fresh vegetables than meat in the cooking to minimize meat consumption yet meet the quantity required. The selection of vegetables can include: tomatoes, mushrooms, pineapples, apples and lemons. Use cooking methods like blanching, cold-mix, steaming, boiling, roasting or baking which use less oil, salt and sugar.

In addition, be selective when you snack. With the lunar festive snacks like sweets and chocolates, nuts like melon seeds and pistachios and dried foodstuff like barbecued meat and squid strips available in the market, we should consume in moderation as they contain high level of sugar, salt and oil.

My health tips: follow the ‘3 less and 1 more’ rule i.e. less oil, sugar and salt but more fibre. Wishing you a wonderful Lunar New Year and enjoy healthy diet.
