【菩提養生素食教室】——菠菜糕

今天要料理的「紅嘴綠鸚哥」可不是鳥,而是一道春季家常菜——菠菜,提起這個菜名的由來,還有一段趣聞。

據傳在清朝,乾隆皇帝私下江南。一日中午,乾隆行至鎮江南鄉,感到腹中饑餓,便走進路邊一農戶家中,決定借這農戶家歇一會兒腳,找點食物充饑。進了門,只有農婦一人在家。乾隆便向她說明來意。農婦見家中來了一位衣著華麗的官人,又驚又愁:驚的是,這偏僻村莊居然來了貴客;愁的是家中實在貧寒,沒有什麼佳餚好招待貴客。農婦在家中尋來找去,僅有上午男人帶回來的兩塊豆腐。她只好又到田裡拔了一把菠菜,將豆腐切成小塊,用油煎成兩面金黃後,投入菠菜一同燴煮,盛了一大碗,端給客人吃。乾隆生在皇宮,每天吃的是山珍海味,哪裡吃過農家小菜,加上腹中饑餓,更覺口味鮮美。

乾隆心想:我雖為一國之君,何時享受過今天這樣口福,但不知此菜是用什麼做的?於是,詢問農婦剛才吃的是什麼山珍海味?農婦見問,暗自好笑,這哪是什麼山珍海味?只不過是一般家常飯菜罷了。豆腐用油一煎,外面金黃色,裡面白玉色,菠菜葉綠根紅,像極鸚鵡的嘴巴。客人既然這樣發問,不妨說一個好聽的菜名告訴他。便隨口回答:「這菜是『金鑲白玉板,紅嘴綠鸚哥』。』至今,在鎮江民間,只要人們一說:「金銀白玉板,紅嘴綠鸚哥。」便知是菠菜豆腐湯了。由於它是素湯,菠菜新鮮、豆腐白嫩、爽口味美,製作簡單,已成為人們喜愛的一種家常菜。

隨著現在醫學科學的發展,我們知道,菠菜即便焯水後,還會殘存少量的草酸,與豆腐中的鈣結合,形成人體難以吸引的草酸鈣。因此菠菜儘量少與豆腐同食。所以今天要教大家料理的「紅嘴綠鸚哥」相當特別──菠菜糕。營養又美味,大人小孩都喜愛的口味,材料與作法如下。

材料──
1、麵粉100克
2、菠菜250克
3、香蔥、薑末、蒜末、炒熟白芝麻、香油、鹽,各少許
4、鮮味醬油2勺,醋半勺,白糖半勺
.
作法──
1、菠菜切斷,加一勺鹽,使勁搓出水。
2、加麵粉,攪均,中火蒸20分鐘。
3、菠菜糕出鍋後,切成小塊,擺盤。
4、調汁:
①蔥花、蒜末、薑末、芝麻,放在碗中備好;
②鍋中放油,炸花椒和八角;
③花椒、八角扔掉;
④熱油澆在第①步的調料碗中;
⑤加入鮮味醬油、香油、醋、白糖,攪勻。
5、切好的菠菜糕蘸料汁吃。

Bodhi vegetarian health food recommendation- Spinach cake
Today, we will prepare “Red mouth green parrot”.

This name sounds like a kind of bird, but it is not. It is actually a home cooked food normally eaten in the spring ie the Spinach. The fanciful name of the dish has an interesting history.

According to legend, during the Qing dynasty, Qianlong emperor privately visited Jiangnan. One afternoon, when Qianlong was at the south village of Zhenjiang, he suddenly felt hungry and entered a peasant’s home with the intention of taking a rest and filling his stomach.

When he entered the hut, only the female peasant was at home. Upon seeing her, Qianlong explained to her the intention of his visit. The lady, seeing such a well dressed court official, felt both surprised and worried. Surprised because a distinguished guest actually had visited her home in this rural and remote village, and troubled because she is very poor and her house did not have any good ingredients for her to whip up a good enough meal to serve the well dressed, distinguished guests.

After rummaging her home, she found only two pieces of bean curd (toufu) which her husband brought back earlier in the morning. At her wit’s end, she went to her fields and brought back some spinach. She sliced the toufu into small cubes and deep-fried them until they turned golden. Using both the fried toufu and spinach, she made a stew. Scooping a generous portion, she offered the cooked stew to her guests.
Qianlong, having born and grown up in the palace, was used to eating all sorts of delicacies every day. In fact, he had never tasted home cooked food from a peasant’s family, which, to him, was something different especially when he was feeling ravenous. He thought that the stew served to him was the best food he had ever tasted!

Qianlong thought to himself: Although I am the king of a country, I had never had the gourmet’s luck of tasting something so good; I wonder how this delicious dish is prepared? Hence, he asked the female peasant what was the delicacy that she had just presented to him. The female peasant, upon hearing Qianlong’s question, felt that Qianlong was rather laughable, as to her, what she had served was just a very normal home cooked meal from a peasant family and not a delicacy. Toufu, after deep-frying, appeared golden on the exterior, while still retaining its white interior. Spinach, with its green leaves and roots slightly reddish, resembled the mouth of a parrot. Since her guests asked her for the name of the “delicacy” which to her is just a normal dish, she came up with an impressive name to answer her guest. This dish is called “Gold plated white jade, red mouth green parrot”. In other words, spinach toufu soup. Since it is a simple vegetarian dish which requires only fresh spinach and soft white toufu and yet taste palatable and easy to prepare, it has since grown to become a popular home cooked food.

With the advancements of medical science, we are all aware that after blanching spinach, there will still be remnants of oxalic acid, which when paired with the calcium from toufu, formed calcium oxalate, which is difficult to be absorbed by our human body. As a result, people seldom eat toufu and spinach together. Hence, we will share with everyone today “red mouth green parrot” dish, an extremely special and unique spinach cake. Nutritious and palatable, it is very popular among people across all age groups. Ingredients and preparation methods are as follows:

Ingredients:
1) 100 g of flour;
2) 250g of spinach;
3) A little onions; powdered ginger; powdered garlic; fried white sesame seeds; sesame oil; pepper, star anise and salt;
4) 2 teaspoons of soy sauce; half teaspoon of vinegar; half teaspoon of white sugar

Preparation method:
1 Sliced spinach, add one teaspoon of salt and rubbed till water appears;
2 Add flour, mix well, steam using medium fire for 20 minutes;
3 After steaming, cut spinach cakes into small pieces and place them on plates to be served;
4 Sauce preparation:-
a Add chopped green onion, powdered ginger, garlic and sesame into a bowl;
b Add oil to a pot and fry pepper and star anise;
c Discard the pepper and star anise after frying. We just want to retain the fragrant oil;
d Add the fragrant oil into the bowl of ingredients prepared in step (a);
e Add soy sauce, sesame oil, vinegar, white sugar and blend well. The sauce is ready to be served;
5 Dip spinach cake to the prepared sauce and enjoy!

「所謂的業力就是過去所有錯誤的積累,業力一旦出現,有很多關就跨不過去,但如果功德具足,就能跨越障礙。」

人生,是不容易的,每個人都為了三餐溫飽勞碌奔波,還要面對生、老、病、死折騰人的重重關卡,而修行禪法、學佛,可以幫助我們用正確的態度來面對這一切,可以給我們帶來解脫的「智慧」和「能量」。
因為,人生只有這一次,我們需要更認真來學習如何快樂?然後變得健康又幸福!讓我們一起來聽聽「李小妹」的感人故事。。。

來自溫哥華的李小妹:
過去我與父親之間有些不愉快,心中對父親有過埋怨。身體也因為常常積累情緒而變得不好,有些內出血的症狀。
一次的機會,我來報名禪修課程,聽到了師父說:「對父母知恩不圖報會有惡業伴隨你的。」我很震驚,才驚覺到自己這些日子對父母的態度,從小我的父母親非常疼愛我,他們千辛萬苦把我養育成人,並將我培養成一個醫學博士,而我不但沒感恩父母,還對父親心懷成見,常與父親頂撞。現在想想,簡直就是一個小人。
.
後來又聽到師父說:「我就是來幫人的,要幫小人變成大人,幫大人變成聖人。」我想師父沒有放棄我,我要改正,要好好修行。
一回到家,我就給遠隔重洋的父親打了個問候的電話,父親非常欣慰,感動得熱淚盈眶,我的淚水也止不住的流,父女倆多年的心結終於解開了。

心結解開了,心情也隨之改變了,每天出門,我看到的天空是份外的藍,份外的潔淨與清新,花兒是如此的美艷,小鳥的叫聲也是格外的悅耳動聽。
.
最重要的是,通過「念佛」和修練「大光明」,我的大出血好了。原來身上被包裹著的一層硬殼,也一層層地剝落了,渾身輕鬆柔軟了。
感動、感恩,與輕鬆,這樣的狀態是我從未有過的體驗,我也要學習將這份喜悅繼續傳下去,引領更多正受著身心疾病折磨的人,也與我一樣變得快樂又健康。

Saw a Face of Happiness…

Practice being happy in order to be healthy!
“What we know about karma is that’s its an accumulation of all the mistakes we have made in the past. The moment karma manifests, there will be a lot of obstacles obstructing our way forward. However, we can easily overcome these obstacles if we have accumulated sufficient merits and virtues.”

Life is never easy. Not only do we have to toil to feed ourselves, we also have to worry about the challenges faced during the four stages of life – birth, old age, sickness and death. Practicing dharma and meditation brings us the wisdom and energy to liberate ourselves and to face those challenges with a positive mindset.

We only have one chance at this life. We should use this opportunity to learn to be happy, which will help us become healthy and blissful! Let us listen to the touching story of how Xiaomei Li found her happiness…

Xiaomei Li from Vancouver:
I used to bear resentment towards my father due to the quarrels we had in the past. The accumulation of negative emotions in my body caused my health to take a turn for the worse some time back and I began to show symptoms of internal hemorrhage.

One day, when I was at the center to register for meditation class, I happened to hear Master say: “Ingratitude towards your parents will cause bad karma to befall you.” This astounded me and made me realize how poor my attitude has been towards my parents. They love me a lot. They have gone through a lot of hardship to bring me up and put me through school to get my medical doctorate. Yet I have never felt gratitude towards them. I even harbored prejudices against my own father, and rebutted him frequently. Come to think about it, I have been really petty.

Not long after that, I also heard Master say: “I am here to help people; to help petty people become magnanimous, and to help magnanimous people become saints.” Knowing that Master will not give up on me gave me the determination to correct my wrongdoings and to persevere in my practice.

The moment I reached home that day, I made a long distance call to my father. He was gratified by my concern, and was so touched that tears filled his eyes. I couldn’t stop my own tears too. The unhappiness that has lived in my heart for so many years melted away in that instant.

From then on, my mood improved. Whenever I am out, I cannot help but admire the sky that is so blue. The air smelled especially clean and fresh. The flowers are so vibrantly beautiful. Even the birds’ songs are especially pleasant to the ears.

Through chanting and practicing the Meditation of Greater Illumination, my internal hemorrhage was cured. The hard shell that has wrapped around me felt off layer by layer and I became more relaxed and at peace.

I have never felt so touched, grateful and relaxed in my life. I realized there are many other people who are suffering from mental and physical ailments in this world. I would like to learn to spread this joy to them and help them achieve happier and healthier lives.

How do we ensure our life is purposeful?

Bear in mind to set a glorious goal. Have foresight and be broad minded; hence, you will not be prone to anger. A learned person is naturally more understanding. Thus our world and our mind may start to change from this very moment.

With a peaceful mind and deep understanding of the world, you will be able to blend in perfectly with nature and the world, you will be kind to one and all, thus you will be successful wherever you go. If you have nothing but love in your heart, even a bunch of grass can become medicine, and stone, your best healing instrument. The key is in great compassion combined with vast knowledge. That, is the truth.

【春季養生系列──菊花枸杞茶】

根據中醫理論,人的五臟與四季對應。四季之中,春天屬木;而人體的五臟之中,肝臟也是木性。因此春季易使肝火旺盛,春天肝病也極易復發。所以,春天養肝恰好是順應氣候變化養生的選擇。
.
菊花,具有養肝、清肝、明目的功效;枸杞、山楂,均能滋養肝腎 。菊花,加上枸杞、山楂、冰糖一起泡來飲用,可以起到清熱排毒、明目養顏的作用。
.
需要注意的是菊花茶性偏苦寒,體虛之人不宜多飲用;胃寒胃虛的人也要少用菊花茶。孕婦也不宜喝。

在選材上,因菊花的種類很多,不懂門道的人會選擇花朵白晰且大的菊花,其實又小又醜且顏色泛黃的菊花反而是上選。「養生枸杞菊花茶」的材料與作法如下。

材料:
菊花20朵、乾枸杞10粒、山楂3片、冰糖150克、水1000ml。
.
作法:
1. 將菊花、枸杞、山楂、冰糖倒入茶壺;
2. 沖入90-100℃沸水;
3. 加蓋燜泡10分鐘左右;
4. 倒出即可飲用。

【Spring Health Series ─ ─ Chrysanthemum wolf-berry tea】

According to Traditional Chinese Medicine, the five internal organs correspond to the four seasons. Among them, spring is categorized under the wood element, same as the liver in the human body. Thus, in spring, liver-fire is strong and so spring is also the season for frequent recurrence of liver illnesses. Therefore, to nourish the liver in spring, we need to adapt to seasonal changes to keep it in good health.

Chrysanthemum has the effect of nourishing and cleansing the liver as well as improving eyesight; both wolf-berries and hawthorn help to nourish the liver and kidney. Chrysanthemum, with wolf-berry, hawthorn, and rock sugar can be steeped into a drink which has cooling and detoxifying effect. It also helps to improve eyesight and promote younger-looking skin.

It should be noted that chrysanthemum tea is of bitter-cold nature, thus unsuitable for people with weak physical conditions. Those with stomach problems should limit the intake of chrysanthemum tea. Due to the large varieties of chrysanthemum available, many people do not know how to choose them. They tend to pick the big, white flowers. In fact, the small, unsightly yellowish chrysanthemum flowers are the best choice. The ingredients and process for making healthy wolf-berry chrysanthemum tea are as follows.

Ingredients:
Chrysanthemum, 20 pieces
Dried wolf-berries, 10 pieces
Hawthorn 3 pieces
Rock sugar 150 grams
Water 1000ml.

Methods:
1. Put chrysanthemum, wolf-berry, hawthorn and rock sugar into a teapot;
2. Pour 90-100 ℃ boiling water to it.
3. Cover and steep for about 10 minutes;
4. Enjoy.

在修佛法之中,不光是我們為母親(親人)念佛,到底我們在修佛法之中,修到的是什麼呢?第一個就是智慧,第二個就是穩定。穩定的心就變成真心。你做人穩定應用在家庭上,就能有穩定的家庭,夫妻不能說一不高興了就離婚;應用在工作上,就有穩定的工作,你不會因為一點點的情緒變化,就提辭職。

如果不穩定會怎麼樣呢?工作不穩定就會帶來家庭的不穩定,家庭的動盪會導致婚姻不穩定。婚姻不穩定的人,孩子吃苦吃大了!很多父母一離婚,在很多孩子的個性之中就埋下了仇恨、扭曲,不能正常地看待人生,所以長大不敢結婚。
因此修一個穩定的心,對我們人的一生,方方面面幫助特別大。

Chanting brings wisdom and stability

The practice of the Dharma refers not merely to chant for our mothers or our loved ones. In reality, as we conscientiously practice the Dharma, we actualize real benefits. First, we gain wisdom. Second, we achieve a sense of stability, and with it, a pure heart. The benefits of such stability are twofold: at home, couples for example, become sensible and do not threaten to divorce due to disagreements; at work, employees do not rashly resign owing to challenges and emotional episodes at the work place.

If the converse is true, what are the implications? Where there’s instability at work, family life invariably deteriorates. This would then have adverse implications on marriage stability. As a consequence, the children inordinately suffer. In extreme circumstances when the parent’s marriage break down irretrievably, the offspring could bear the hatred and develop a biased view of the world. They may no longer view life positively and wholesomely, and many choose not to marry eventually.
Therefore, it is critical that we practice towards a stable and pure heart. This will have tremendous benefits to all aspects of our life.

The path – it is arduous and protracted; yet it leads to growth.

The blade of grass – every new sprout that first lay in the soil requires diligently plowed soil and regular irrigation to thrive into bountiful harvests (The young and the youthful)
.
The growth of every sprout entails risk, instability, and significantly, curiosity and apprehension. Such a journey is marked by choppiness as it unravels, as the roots extend and prise at the various stratum of soil to reach out to the nutrients. It is necessary to ensure a solid foundation of the roots. The young sprout is invariably scarred during these tribulations, and valiant efforts could even be in vain. Yet, there is no short-cut to this process.

This is because every growth path that is executed with conscientious efforts and sensibilities will yield eventual harvests.
How do we ensure our life is purposeful? How do we achieve breakthroughs and favorable results?
