【素食年菜食譜】蔬食豆皮捲

食材與作法如下:

食材:
豆芽、芹菜、紅蘿蔔、木耳、乾香菇、薑、薄豆皮、鹽、白胡椒、麵粉。

作法:
1.乾香菇先泡水軟化切絲,泡完的香菇水還可再利用!之後將木耳、紅蘿蔔切絲、芹菜切段、薑切末。
.
2.放入薑末跟香菇在油鍋爆香。
.
3.再依順序分別加入紅蘿蔔絲、木耳絲、芹菜段跟豆芽菜,依個人口味加入鹽、白胡椒調味。
.
4.最後倒進香菇水悶煮五分鐘,悶完起鍋並把湯汁瀝乾,放涼備用,內餡就製作完成了。

5.把豆皮放成菱形狀,夾適量的內餡放置中間,由下往上捲起豆皮,再把左右往內捲。
.
6.捲至收口處,沾一點麵粉糊,做固定。
.
7.最後教大家比較健康的作法,就是使用「氣炸鍋」,如果沒有氣炸鍋,也可用一般油炸或煎煮的方法。氣炸鍋作法:在下鍋前,將表皮刷上油,雙面各烹煮10分鐘,就完成囉!

【Vegetarian New Year Dishes】 Vegetarian Bean Curd Rolls

Ingredients :
Bean sprouts, celery, carrot, fungus, dried mushroom, ginger, dried thin beancurd skin, salt, white pepper and flour
Method:
1. Soak the dried mushrooms until soft and cut into strips. The water used to soak the mushroom can be reused! Next, cut the fungus, carrots into strips , cut celery into sections, and chop ginger finely.
2. Fry the finely chopped ginger and mushroom in a pan with oil.
3. Add carrot, fungus, celery and bean sprouts separately in order, add salt and white pepper according to your taste.
4. Finally, pour in the water used to soak the mushrooms and simmer for five minutes. After simmering, remove from pan and drain the broth, let it cool, and the filling is completed.
5. Put the beancurd skin into a diamond shape, place an appropriate amount of filling in the middle, roll the beancurd skin from the bottom up, and then fold in from the left and right side.
6. Roll up to the end, apply a little flour paste to keep it in place
